How to cook Jamaican Jerk Chicken

Jamaican jerk chicken is a spicy way of cooking chicken. Many ingredients for the seasoning and spices of Jerk Chicken exist, but the universal ingredients include: scotch bonet, black pepper, green onions, garlic, ginger, lime juice, thyme, all spice, pimento.

A sample Jamaican  marinate for one whole chicken is as follows from Jamaica Travel and Culture.com:

6 scotch bonnet pepper
1 bowl of garlic
3 onions
2 tablespoon of thyme
2 tablespoon of salt
2 tablespoon of all spice
2 tablespoon of sugar
2 teaspoon of black pepper
2 teaspoon of cinnamon
2 teaspoon of nutmeg
1 cup of orange juice
1 cup of vinegar
1/2 cup of soy sauce
1 lime for the juice

The chicken should bask in the marinate overnight or for 8 hours. It is intended to be grilled but can be baked in an oven. The meat should be slowly cooked, so it is soft and tender.
