How to prepare southern fried chicken

Many recipes exist for southern fried chicken, but the ingredients are basic: all purpose flour, salt, black pepper, paprika, garlic, chicken, oil or grease in any state. Alternative seasoning might be buttermilk or hot sauce. Some mix the flower with the seasoning. Others place the seasoning on the chicken or the chicken in the seasoning, in the case of buttermilk and hot sauce. Temperatures range from 320s-370s F. A cast-iron skillet is the preferred cooking pan. Long forks or prongs are used to move around the chicken.

The following is one recipe for southern fried chicken:
  • 2  to  3 1/2 pound frying chicken, cut into 8 pieces
  • Freshly ground black pepper
  • 2 cups of all-purpose flour
  • 2 tablespoons paprika
  • 1 tablespoon paprika for the finished chicken
  • vegetable oil
Remove the skin off the chicken, and sprinkle salt and black pepper and mix with the chicken. Proceed to mix the flower with the salt,  paprika, and black pepper. Later add the chicken to the flower. Make sure no excess flower lumps are on top of the chicken.

Add two inch deep of oil in the skillet. Temperature should be set to 375 1/4 degrees. Place chicken in skillet.  Make sure chickens are not touching each other. Continuously, turn the chicken on each side, until it is completely brown.

Remove the chicken and drain the oil out. Proceed to sprinkle paprika on top, when oil is drained. Keep chicken warm in a 250 1/4 F oven.
